Last night I didn't feel much like crafting as my thoughts were with those affected by Hurricane Katrina. But I still felt the need to keep busy, so I baked some mango bread while I watched the devasting coverage on television.
I've seen this on a bunch of other blogs but I thought I'd repeat it here anyway.
Crafters United has an etsy shop set up and all proceeds generated will be donated to the Red Cross Hurricane Relief Fund for the victims of Hurricane Katrina.

The mango season seems to have come a little late this year in Hawaii. So late that I didn't think our tree was going to bear any fruits, but yesterday Mr. T went into our backyard and came back with a single beautiful ripe mango. Not enough to make bread, but luckily my Dad also just gave me a whole bag of mangoes.
Here's the recipe:
Mango Bread
2 cups all purpose flour
2 teaspoons baking soda
1 1/2 teaspoons cinnamon
1 1/2 cups sugar
1/2 cup shredded coconut
1/2 cup chopped walnuts
1/2 cup raisins
2 cups chopped mangoes
3/4 cup salad oil
3 eggs beaten
2 teaspoons vanilla
Preheat oven to 350 degrees F. Grease a 9x5x3 inch loaf pans or 2 - 7.5x3.5x2 inch loaf pans. Sift flour with baking soda and cinnamon into mixing bowl. Stir in sugar, coconut, walnuts and raisins. Add mangoes, salad oil, eggs and vanilla and mix well. Pour into prepared pans and bake for 1 hour and 15 minutes or until toothpick or knife inserted into middle of loaf comes out clean.
mmmm...mango bread. so deliciously moist! lucky you have a source for mangoes, all of mine have moved or chopped their trees down--ack! poor trees.
goodness those poor people--things just seem to get worse and worse for them. thanks for the link, i want to look into that.

that looks so good! i am going to have to try it out. around here we have been cooking up zuchini bread, they came late this year too.
i am green with envy that you have fresh from the tree mangos though. lucky you!

Oh.......... Mangos! Mango bread sounds truely delightful. :( I wish mangos were not as pitiful as they are around here. I doubt they would do your bread justice.
